Students will learn how to make mead easily in their own homes. We will make a small batch of mead must at A&S which will be available on a first come first served basis for the cost of materials. There will also be pre-made must in one gallon plastic bottles for $8/bottle. Class notes will include a guide to period sources, suggested recipes, and instructions detailing how to care for your mead while fermenting.

Ever start planning a feast or cooking a dish and not known what kind of cheeses to use? Rather than tossing some Colby or Monterey Jack on the table or in the recipe, why not use a period cheese instead! This class will go over cheeses that were used in a number of European locations during period (modern day France, Italy, Switzerland, Holland, Germany, Spain, and Great Britain) - and will include a tasting of many of their modern counterparts. Part of the discussion will cover the different families of cheeses, the differences between cheeses made in period and cheeses made today, and how to properly serve them.

Relief carving in wood using Alto, Mezzo, and Basso relievo carving techniques. Students will receive a basic set of wood carving tools and a block of basswood with a pattern on it. The students will receive instruction on care and feeding of the tools, a demonstration of the Alto, Mezzo, and Basso (high middle and low relief)techniques and will choose which direction to take their project(s).

Learn to cut and shape small sheet metal blanks using snips, files, stamps, punches and drills, to make buttons, plaques, toggles, etc. Copper will be provided.
If you want to work in silver it will be available for a small fee, or bring your own annealed 20 - 26 gauge silver, copper or brass sheet.

Stitches taught will be those from the late 1500's and first few years of the 1600's. The stitches are counted stitches used for filling in spaces similar to how counted cross stitch is used to fill in. Students will be provided with hand-outs, linen, silk threads, and needles.
